Dietro la Collina (‘Behind the Hill’) is a 100% Sangiovese, certified organic wine (certification by Bioagricert), harvested in 2023. The grapes come from vineyards located in the clayey soils of our estate, in the Montecucco appellation area, between 250 and 300 meters above sea level.

Alcohol content: 13.5%

Vinification

The grapes are carefully selected in the vineyard, hand-picked during the coolest hours of the day, destemmed and crushed, and transferred to temperature-controlled stainless steel fermentation tanks. After the spontaneous start of fermentation using indigenous yeasts, the temperature is gradually raised, reaching a maximum of 29-30°C towards the end of the fermentation process. Maceration on the skins is managed with daily brief pumping over and déléstage, lasting approximately 20 days. After racking, the wine undergoes malolactic fermentation in stainless steel tanks, then racked and transferred to used 500-liter tonneaux and 225-liter barriques of fine French oak, where it ages for 15 months. Blending, stabilization, and bottling follow.

Tasting

The color is a bright ruby red with elegant garnet highlights. The aroma is warm, ethereal, complex, and very clear, with fruity notes typical of the grape variety (wild red berries), subtle spicy notes (caramel and toasted), and a complex background of Mediterranean medicinal herbs. The firm yet silky tannins are well balanced by the volume and fullness of the flavor. The rich and vibrant acidity gives this wine freshness, good structure, and a pleasant drinkability, along with a long potential for bottle aging.

Recommended serving temperature

Serve at around 16–17°C in very large glasses.

Food pairing

Ideal with grilled beef and wild boar stew. Fantastic as a meditation wine.
