‘Tramonti e Mare’ (‘Sunsets and Sea’)  Maremma Toscana Ciliegiolo DOC is certified organic and produced from 100% Ciliegiolo grapes, an ancient native Tuscan grape variety. The grapes come from our hillside vineyards.

Alcohol content: 12%

Vinification

The grapes are carefully selected in the vineyard and hand-picked into crates. They are then cooled for a few hours in a climate-controlled room, destemmed and crushed, and transferred to temperature-controlled stainless steel tanks. Fermentation is carried out with indigenous yeasts (spontaneous) at a maximum temperature of 26°C. Maceration is managed with daily pumping over and delestage and lasts a maximum of 10 days. After racking, the wine is transferred to 2000-liter Slavonian oak barrels, where it ages on the fine lees for two months, without undergoing malolactic fermentation. It then undergoes a stabilization period in stainless steel for approximately four months before bottling. Finally, it ages in bottle for at least two months before being released.

Tasting 

Intense ruby red color, brilliant and lively, with violet highlights. On the nose, an explosive fruity intensity with notes of plum and ripe red berries; in the background, vivid and well-defined spicy and balsamic notes of thyme, tobacco, and vanilla; on the finish, a delicate hint of bitter cocoa. Rounded palate with excellent acidity, lively and very silky tannins, and a clean, fresh, savory, and persistent finish.

Recommended Serving Temperature

Serve at 12-13°C in medium-sized glasses.

Food Pairing

Ideal with summer pasta dishes, raw vegetables, and grilled white and red meats.
