Controlled Designation of Origin. Organic Wine

‘Tramonti e Mare’ (‘Sunsets and Sea’)  Maremma Toscana Vermentino DOC is certified organic, produced from 100% Vermentino grapes. After fermentation, it ages for 6 months in stainless steel vats. The grapes come from our vineyards, located on a hillside, halfway between the Mediterranean Sea and Mount Amiata. The wine is reminiscent of the Mediterranean: it is dry, fresh, summery, and hearty. It is well-suited to being drunk young.

Alcohol content: 11.5%

Vinification

The grapes are harvested by hand when they have reached the right concentration of sugar and the skin turns into golden-brown. Once they arrive at the cellar, they are immediately destemmed and gently pressed. The most is then transferred to stainless steel tanks for 48 hours of decanting at 8°C. This is followed by racking and spontaneous alcoholic fermentation with indigenous yeasts at a temperature of 18°C. After alcoholic fermentation, the wine is aged in stainless steel tanks, where it remains on the fine lees at 15°C for approximately four months, without undergoing malolactic fermentation. Racking, stabilization, and bottling follow, taking place six months after the harvest.

Tasting 

The color is pale and brilliant straw yellow, with greenish highlights. The aromas are fruity, with subtle varietal notes of Golden Delicious apple, bergamot, and pink grapefruit; slightly herbaceous with hints of sage leaves, and an intense minerality in the background. On the palate, the freshness and acidity stand out, enhancing the pleasantness of this wine, balanced on the finish by the fullness and roundness of the flavor and complemented by a pronounced savory character typical of the terroir.

Serving Recommendations

Serve at 8-9°C in medium-sized glasses.

Ideal for aperitifs and appetizers with cold cuts and cheese, as well as fish dishes.
